Cinnamon Cheerios cereal, crushed fine

unbleached flour

baking powder

cinnamon

salt

fat-free milk

2/3 cup
unsweetened applesauce

olive oil

egg
In a mixing bowl, combine crushed cereal, flour, baking powder, cinnamon, and salt. Mix well. In a liquid measure, whisk milk, applesauce, oil, and egg. Add to dry ingredients until all is moistened. Heat a large skillet, ladle in the batter, using 1/4 cup batter per pancake. Cook for two minutes, then flip carefully and cook for two minutes more, or until lightly browned. Repeat with the remaining batter.
