Barbecued Chicken on a Bun

Adapted from Jackie Olden's Microwave Cookbook

  • 2 lbs ground chicken breast skinless
  • 1 cup onions, chopped
  • 1 cup bell peppers, chopped
  • 3 stalks celery, sliced
  • 10 ozs no-salt-added ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp white vinegar
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 tbsps chili powder
  • 9 whole hamburger buns, toasted
In a large glass bowl, combine chicken, onions, bell peppers, and celery. Mix well. Microwave on high for five minutes. Stir to break up chicken and microwave again on high for two minutes or until chicken is no longer pink. In a small bowl, combine ketchup, mustard, vinegar, salt, black pepper, paprika, and chili powder. Stir into chicken mixture. Microwave on medium-high for eight minutes, stirring after half the cooking time. Microwave again on medium-high for five minutes, or until sauce thickens. Spread one cup mixture onto each bun.
