frozen broccoli flowerets, thawed

cheddar cheese, shredded

bread crumbs, toasted

Preheat oven to 400. Line a piece of parchment paper onto a baking sheet; set aside. Bring a large saucepan with salted water over a boil. Add broccoli and cook for four minutes. Drain and cool. In a food processor, process broccoli lightly until small pieces form. In a mixing bowl, combine broccoli, cheese, bread crumbs, eggs, and salt. Mix well. Shape evenly into 20 meatballs. Place onto prepared baking sheet. Bake for 20 minutes, or until lightly browned on bottom.
