fresh carrots, shredded

Preheat oven to 375. Prepare baking sheets with cooking spray; set aside. In a mixng bowl, combine flour, oats, sugars, cinnamon, baking powder, nutmeg, and salt. Mix well. Add carrots, egg, oil, and vanilla extract. Mix until all is moistened. Roll batter into one inch balls and place on prepared baking sheets. Bake for 20 minutes, or until lightly browned on the bottom.
