Cheese Stuffed Manicotti

Adapted from Great American Home Cooking

  • Marinara Sauce:
  • 1 cup onions, chopped
  • 29 ozs canned diced tomatoes, undrained
  • 3/4 cup water
  • 1 1/2 ozs Spaghetti Sauce Mix
  • 1/2 tsp salt
  • 14 pcs manicotti pasta, cooked and drained
  • 14 pcs string cheese sticks
  • 4 ozs mozzarella cheese, shredded
Cheese Stuffed Manicotti
Preheat oven to 350. Prepare 9"x13" casserole dish with cooking spray; set aside. In a large saucepan, cook onions until tender. Add tomatoes, water, spaghetti sauce mix, and salt. Bring to a boil. Reduce heat and simmer for ten minutes, or until heated through. Meanwhile, cook manicotti pasta according to package directions. Drain and rinse. Cool. Insert a cheese stick into each manicotti tube. Aarrange tubes into prepared dish. Pour sauce evenly over top to cover pasta tubes completely. Sprinkle top evenly with cheese. Bake for 30 minutes, or until heated through.
