crushed pineapple, undrained

maraschino cherry juice

maraschino cherries, coarsely chopped

pure vanilla extract
Preheat oven to 400. Prepare 17 regular sized muffin cups with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Add crushed pineapple, cherry juice, cherries, eggs, oil, and vanilla extract. Mix until all is moistened. Spoon batter evenly among muffin cups. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
