Chicken & Bean Tacos

Adapted from Bush Brother's & Company

  • 1 lb ground chicken breast, skinless
  • 1/2 cup onions, chopped
  • 28 ozs vegetarian baked beans
  • 1 oz low-sodium taco seasoning mix
  • 1 tsp salt
  • 12 whole taco shells
Chicken & Bean Tacos
In a large skillet, cook chicken and onions until chicken is until no longer pink. Add beans, taco seasoning mix, and salt. Mix well. Bring to a boil and simmer for ten minutes, or until heated through. Spoon half cup mixture among taco shells. Sprinkle each with cheese, if desired.
