Chicken & Creamy Noodles

Adapted from Microwaving Fast & Easy Main Dishes

  • 1 lb ground chicken breast
  • 1 cup celery, chopped
  • 1/2 cup onions, chopped
  • 1/2 cup bell peppers, chopped
  • 10 3/4 ozs low-fat cream of mushroom soup
  • 4 ozs fat-free cream cheese, cut into cubes
  • 4 ozs egg noodles, cooked and drained
  • 10 ozs frozen corn, thawed
  • 1/8 tsp black pepper
In a large glass bowl, cook chicken, celery, onions, and bell peppers on high for six minutes or until chicken is no longer pink. Add mushroom soup, cream cheese, cooked noodles, corn, and black pepper. Mix well. Microwave on high for five minutes, or until cream cheese has melted and mixture is heated through. This recipe was made in a 1100-watt microwave.
