Chickenburger Stroganoff

Adapted from Kenmore Microwave Cooking

  • 1 lb ground chicken breast
  • 8 ozs mushrooms, sliced
  • 1/2 cup onions, chopped
  • 1 tsp salt
  • 10 3/4 ozs low-fat cream of mushroom soup
  • 2 tbsps tomato paste
  • 1/8 tsp black pepper
  • 1 cup light sour cream
  • 2 tsps parsley
  • 4 cups egg noodles, cooked
In a 2-quart glass casserole dish, combine chicken, mushrooms and onions. Microwave on high for ten minutes, or until chicken is no longer pink. Stir in soup, tomato paste, salt, black pepper, sour cream, and parsley. Mix well. Cover and cook for twelve minutes, stirring once during cooking time. Serve over cooked noodles. This recipe was made in a 1000-watt microwave.
