Cincinnati Chili

Adapted from New World Pasta Company

  • 1 lb ground chicken breast
  • 1/2 cup onions, chopped
  • 1 1/2 tbsps cocoa powder
  • 2 tsps chili powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/8 tsp cayenne pepper
  • 28 ozs crushed tomatoes
  • 6 ozs tomato paste
  • 15 ozs canned dark red kidney beans, drained
  • 16 ozs angel hair spaghetti, cooked
Cincinnati Chili
In a large saucepan, cook chicken and onions until the chicken is no longer pink. Add cocoa powder, chili powder, salt, cinnamon, allspice, and cayenne pepper. Mix well. Stir in tomatoes and tomato paste. Bring to a boil. Reduce heat and simmer for 30 minutes.
