Classic Pineapple Lime Mold

Adapted from Dole, Classic Pineapple Recipes

  • 20 ozs crushed pineapple, reserve syrup
  • 6 ozs lime gelatin powder
  • 1 2/3 c water, boiling
  • 1 c fat-free cottage cheese
  • 1 c Cool Whip Free, thawed
  • 1 c miniature marshmallows
  • 1/4 c walnuts, chopped
Dissolve gelatin powder in boiling water. Stir in reserved pineapple syrup. Refrigerate until slightly thickened, 1 1/4 hours. Fold in pineapple, cottage cheese, whipped topping, marshmallows, and walnuts. Mix well. Pour into a 13"x 9" pan or 3-quart mold. Chill three hours, or until firm. Slice or unmold to serve.
