Preheat oven to 350. Prepare a 8"x 4" loaf pan with cooking spray; set aside. In a large skillet, cook onions, celery, and bell peppers until tender. Stir in ketchup. In a mixing bowl, combine half cup ketchup mixture, chicken, crumbs, egg, salt, and black pepper. Mix well. Shape chicken mixture into prepared pan. Spread remaining ketchup mixture over top. Bake loaf for one hour, or until loaf reaches 185 on a meat thermometer.; let stand five minute before slicing.
