In a mixing bowl, combine cream cheese, cookie crumbs, and peppermint extract until blended. Shape into 54 (1-inch) balls. Place in a single layer onto a waxed paper-lined baking sheet. Freeze for 30 minutes, or until firm. Melt both chocolates in a saucepan over low heat until smooth. Set saucepan in a hot water bath to maintain consistency. Dip each cookie ball into melted chocolate, return to waxed paper-lined baking sheet. Sprinkle tops with chocolate sprinkles. Refrigerate for 1 hour, or until firm.
