fat-free evaporated milk

pure vanilla extract
Prepare skillet with cooking spray and heat on medium until hot. In a mixing bowl, combine cornmeal and salt. Slowly add boiling water. Cover and let stand ten minutes. Stir in flour, baking powder, cinnamon, egg, milk, and vanilla extract. Mix well. Ladle in the batter, using 1/4 cup per pancake. Cook for two minutes, then flip carefully and cook for two minutes more or until browned.
