low-fat buttermilk

light mayonnaise

cheddar cheese, shredded
Preheat the oven to 350. Prepare an 11" x 7" baking dish with cooking spray; set aside. In a skillet, cook chicken cubes and broccoli until the chicken is no longer pink. Add salt. Stir in rice, buttermilk, and mayonnaise. Mix well. Spread the mixture evenly into the prepared dish. Sprinkle with cheese. Bake for 25 minutes or until rice is cooked.
