Easter Egg Cake Bites

Adapted from McCormick & Company, Inc.

  • 15 1/4 ozs white cake mix
  • 1 1/2 ozs Dream Whip whipped topping mix
  • 1/2 tsp baking powder
  • 1 cup water, cold
  • 1/4 cup olive oil
  • 1 tsp pure vanilla extract, divided
  • 4 ozs marshmallow creme
  • 8 ozs milk chocolate chips, melted
  • 8 ozs chocolate flavored coating, melted
  • Easter sprinkles
Easter Egg Cake Bites
Preheat oven to 350. Prepare a 9 x 13" pan with cooking spray; set aside. In a mixing bowl, combine cake mix, whipped topping mix, and baking powder. In another mixing bowl, combine water, eggs, oil, and vanilla extract. Mix dry ingredients with wet ingredients just until moistened. Spread mixture into prepared pan. Bake for 25 minutes or until golden brown. Cool. In a mixing bowl, combine crumbled cake and marshmallow creme. Mix well. Shape into 1-inch balls then roll to form egg shape. Chill for two hours. Using a fork, dip one cake bite at a time into melted chocolate. Tap back with a fork against edge of dish to allow excess chocolate to drip off. Place cake bites on to wax paper-lined baking sheets. Decorate as desired using Easter sprinkles. Chill for 30 minutes, or until chocolate is set.
