All Bran Cereal

fat-free milk

olive oil

eggs, slightly beaten

unbleached flour

granulated sugar

baking powder

cinnamon

candied fruit mix
Prepare 17 standard muffin cups with cooking spray; set aside. In a small bowl, combine cereal and milk; let set for ten minutes. In a mixing bowl, combine cereal mixture, oil, and eggs. Mix well. In another mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt. Mix wet ingredients with dry ingredients just until all is moistened. Add candied fruit mix. Preheat oven to 400. Fill prepared muffin cups three-fourths full. Bake for 25 minutes, or until toothpick inserted in center comes out clean.
