gingerbread cookies, cut into pieces
In a double boiler, melt wafers and vanilla-flavored coating until smooth. Mix until well blended. Spread the chocolate mixture until it’s about ¼ inch thick evenly onto a baking sheet, lined with wax paper. Press cookies slightly in the chocolate mixture. Refrigerate for 30 minutes, or until chocolate is firm to the touch. Break into small pieces to serve. Note: The serving sizes will depend on how big you break into pieces.
