Granny's Peaches & Cream Cobbler

Adapted from Simply Delicious

  • Filling:
  • 1 cup granulated sugar
  • 2 whole eggs, slightly beaten
  • 2 tbsps unbleached flour
  • 1 tsp cinnamon
  • 6 cups fresh peaches, sliced
  • Cobbler:
  • 1 1/2 cups unbleached flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup margarine, softened
  • 1 whole egg, slightly beaten
  • 2 tbsps fat-free milk
Granny's Peaches & Cream Cobbler
Preheat oven to 400. Prepare a 13 "x 9" pan with cooking spray; set aside. In a mixing bowl, combine one cup sugar, two eggs, two tablespoons flour, and one teaspoon cinnamon. Mix well. Fold in peach slices. Spread mixture evenly into prepared pan; set aside. In another mixing bowl, combine flour, remaining sugar, baking powder, remaining cinnamon, and salt. Cut in margarine until crumbly. Stir in egg and milk. Mix just until moistened. Crumble mixture over peaches. Bake for 50 minutes, or until lightly brown on top.
