Preheat oven to 400. Prepare eight muffin pans with cooking spray; set aside. In a mixing bowl, combine cornbread mix, ham, and cheese. Add milk, egg, mustard, and salt until combined . Fill each muffin pan with 2 ounces of batter. Bake for 20 minutes, or until light golden brown. Remove from muffin pans and cool completely.
