Heartland Chili

Adapted from Bush Brothers & Company

  • 1 lb ground chicken breast skinless
  • 1/2 cup onions, chopped
  • 1/2 cup bell peppers, chopped
  • 27 ozs no-salt-added dark red kidney beans, undrained
  • 14 1/2 ozs canned diced tomatoes, undrained
  • 11 ozs canned corn, drained
  • 6 ozs tomato paste
  • 1/2 cup water
  • 2 tsp chili powder
  • 1 tsp salt
In a large pan, cook chicken, onions, and bell peppers until chicken is no longer pink. Stir in beans, tomatoes, corn, tomato paste, water, chili powder, and salt. Mix well. Bring mixture to a boil. Cover, reduce heat; simmer 25 minutes.
