Irish Swirl Brownies

Adapted from McCormick & Company, Inc.

  • Brownie Layer:
  • 18 ozs brownie mix
  • 2/3 cup oil
  • 2 whole eggs
  • 3 tbsps water
  • 1 tsp pure vanilla extract
  • Cream Cheese Marble:
  • 8 ozs neufchatel cream cheese, softened
  • 1/4 cup granulated sugar
  • 2 tbsps unbleached flour
  • 1 whole egg
  • 1 tsp green food coloring
Irish Swirl Brownies
To prepare the brownie base, combine brownie mix, oil, two eggs, water, and vanilla extract in a mixing bowl. Mix until all is moistened. Reserve one cup mixture. Spread the remaining mixture into a prepared 9" x 13" pan; set aside. In another mixing bowl, combine cream cheese, sugar, flour, remaining egg, and green food coloring. Mix until smooth. Pour evenly over the brownie layer in the pan. Drop the reserved brownie mixture by spoonfuls over the cream cheese layer. Cut through the batter using a baking wooden dowel several times for a marble effect. Bake for 25 minutes. or until the toothpick inserted in the center comes out clean.
