Mint Cookies

Adapted from World's Greatest Christmas Cookies

  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3/4 cup margarine, softened
  • 2 whole eggs
  • 2 tbsps water
  • 1 tsp pure vanilla extract
  • 3 drops green food coloring
  • 1/2 tsp peppermint extract
  • 3 cups unbleached flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 32 pcs chocolate mint candies, unwrapped and halved
  • Frosting:
  • 4 ozs chocolate mint candies
  • 4 ozs chocolate flavored coating
  • chocolate sprinkles
Mint Cookies
In a mixing bowl, combine granulated sugar, brown sugar, and margarine. Mix until combined. Add eggs, water, vanilla extract, food coloring, and peppermint extract. Mix until all is combined; set aside. In another mixing bowl, combine flour, baking soda, and salt. Add to wet ingredients just until combined.Chill dough for an hour, or until firm. Place a candy piece into a piece of cookie dough 1/8" around the dough. Repeat until all dough is used. Preheat oven to 350. Place cookies onto prepared baking sheets, spacing them apart so they don't touch during baking. Bake for 14 minutes, or until lightly browned on the bottom. Meanwhile, melt the chocolates until smooth. Spread an even amount of chocolate onto each cooled cookie. Sprinkle tops with sprinkles.
