quick cooking oats

unbleached flour

granulated sugar

baking powder

eggs, slightly beaten

fat-free milk

olive oil

lemon juice
In a mixing bowl, combine oats, flour, sugar, baking powder, and salt. Add eggs, milk, oil, and lemon juice until all is moistened. Ladle in the batter, using 1/4 cup per cake. Cook for two minutes, then flip carefully and cook for two minutes more.
