refrigerated orange juice

dried cranberries

orange peel, grated
Preheat oven to 400. Prepare 18 standard muffin pans with cooking spray; set aside. In a small bowl, combine flour, sugar, and baking powder; set aside. In a mixing bowl, combine cereal, orange juice, oil, and egg. Let stand five minutes. Add dried cranberries and orange peel. Stir in dry ingredients. Mix until all is moistened. Pour batter evenly among muffin cups. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
