margarine, softened

light brown sugar, packed

neufchatel cheese, softened

pure vanilla extract

unbleached flour

baking powder

cinnamon

walnuts, chopped fine

Frosting:

1/2 cup
powdered sugar

1/4 cup
peach preserves
-
1 tbsp
margarine, softened
Preheat oven to 350. In a mixing bowl, combine half cup margarine, Neufchatel cheese, brown sugar, and vanilla extract until creamy. In another mixing bowl, combine flour, baking powder, cinnamon, salt, and walnuts. Mix well. Add dry ingredients to wet ingredients until all is moistened. Fold in peach slices. Drop by level tablespoons onto prepared baking sheets. Bake for 15 minutes, or until bottoms are lightly browned. Cool. To prepare frosting, combine powdered sugar, peach preserves, and remaining margarine into a food processor, until smooth. Spread evenly onto each cookie.
