Crumb Mixture:

1 cup
unbleached flour

1 cup
quick cooking oats

1/2 cup
granulated sugar

1/4 cup
margarine

1/2 tsp
baking soda

1/4 tsp
salt

2 tsp
almond extract

3/4 cup
peach preserves
-
1 tbsp
water
Prepare a 11"x7" dish with cooking spray; set aside. Preheat oven to 350. To prepare crumb mixture, combine flour, oats, sugar, margarine, baking soda, salt, and almond extract until crumbly. Reserve 3/4 cup of mixture. Press remaining onto bottom of prepared dish. In a small bowl ,combine peach preserves and water. Add more if needed until spreading consistency. Spread evenly over top. Sprinkle with reserved crumb mixture. Bake for 25 minutes, or until edges are slightly browned.
