pecans, chopped fine
Preheat oven to 350. Prepare two 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugars, pumpkin pie spice, baking soda, baking powder, and salt. Mix well. Stir in pumpkin, oil, water, vanilla extract, eggs, and pecans. Mix until all is moistened. Spread batter evenly between prepared loaf pans. Bake for one hour, or until toothpick inserted in center comes out clean.
