whole wheat flour

light brown sugar, packed

pumpkin pie spice

canned pumpkin

eggs

olive oil

1/4 cup
fat-free milk

pure vanilla extract
Preheat oven to 350. Prepare 16 standard muffin cups with cooking spray' set aside. In a mixing bowl, combine flour, sugar, baking powder, cinnamon, pumpkin pie spice, salt, and baking soda. Mix well. Add pumpkin, eggs, oil, milk, and vanilla extract. Mix until all is moistened. Spoon batter 3/4 cup full in each muffin cup. Bake for 30 minutes, or until toothpick inserted in center comes out clean.
