Raisin Pound Cakes

Adapted from Quick Cooking

  • 18 1/4 ozs yellow cake mix
  • 1 c sweetened applesauce
  • 1/2 c water, cold
  • 2 tbsps olive oil
  • 1 c egg whites, slightly beaten
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 c raisins
Preheat oven to 350. Prepare two 8" x 4" loaf pans with cooking spray; set aside. In a mixing bowl, combine cake mix, applesauce, water, oil, egg whites, cinnamon, nutmeg, allspice, and raisins. Mix until thoroughly combined. Pour batter evenly between prepared pans. Bake for one hour, or until toothpick inserted in center comes out clean.
