Preheat oven to 400. Cut each potato lengthwise into eight wedges. Place on unprepared jelly roll pan. Mix potatoes, oil, parsley, cajun seasoning, and salt with hands until evenly coated. Bake for 50 minutes, or until light browned, turning wedges halfway through baking time.
