Self Frosted Cookies & Creme Cake

Adapted from Easy Livin Microwave Cooking for the Holidays

  • Topping:
  • 3 tbsps margarine, softened
  • 2 tbsps granulated sugar
  • 1/4 cup light brown sugar, packed
  • 3/4 cup chocolate sandwich cookies, crushed
  • Cake:
  • 18 1/4 ozs white cake mix
  • 1 1/2 ozs Dream Whip whipped topping mix, dry
  • 1/2 tsp baking powder
  • 1 cup water, cold
  • 1/2 cup egg whites
  • 1 tbsp olive oil
  • 1 tsp pure vanilla extract
  • 10 pcs chocolate sandwich cookies, crushed
Prepare a microwave tube pan with cooking spray and sugar; set aside. To prepare topping, combine butter and sugars in a glass bowl. Microwave on high for 75 seconds. Add 3/4 cup cookies crumbs. Mix well. Spread evenly onto bottom of microwave tube pan; set aside. In a mixing bowl, combine cake mix, whipped topping mix, and baking powder. In another mixing bowl, combine water, egg whites, oil, and vanilla extract. Mix dry ingredients with wet ingredients just until moistened. Spread mixture evenly over cookie mixture in pan. Sprinkle top with remaining cookie crumbs. Swirl cookies in gently with a knife. Place tube pan on an inverted plate in the microwave oven. Microwave for four minutes on defrost. Rotate pan and microwave again for six minutes on high. Then, microwave on medium-high for four minutes. Let stand four minutes. Invert immediately onto serving plate.
