Preheat oven to 300. Prepare a 13" x 9" pan with cooking spray and flour; set aside. Reserve one and half cups cake mix; set aside. In a mixing bowl, combine remaining cake mix, one egg, and oil. Press mixture into bottom of prepared pan. In same bowl, combine sour cream, sugar, remaining eggs, reserved cake mix, lemon juice, milk, and food coloring. Mix until moistened. Pour into crust. Bake for 50 minutes, or until center is firm. Once cooled, spread pie filling evnly over top. Chill several hours before serving.
