Crust:

Preheat oven to 400. Prepare a 8" deep dish pie plate with cooking spray; set aside. To prepare crust, combine baking mix and water until soft dough forms. Press onto bottom and up sides of prepared pan, Bake for five minutes. or until lightly browned. Cool. To prepare filling, combine eggs, sour cream, salt, and black pepper. Mix well. Add spinach, cheese, onions, and half the crumbled bacon. Mix well again. Pour into pre-baked crust. Sprinkle with remaining bacon crumbs. Bake for 45 minutes, or until until center is set.
