turkey light meat, skinless, cooked and cubed

celery, sliced

Prepare a 13" x 9" pan with cooking spray. Arrange half the bread slices into the bottom of pan. Brush with one tablespoon of butter. In a large skillet, cook celery and onions until tender. Add stuffining mix and heat through. Top with half the turkey, stuffing mixture, and cheese. Brush the remaining bread slices with the remaining one tablespoon of butter and place, buttered side-down, on cheese. Top with remaining turkey, stuffing mixture, and cheese; set aside. In a mixing bowl, combine the eggs, milk, gravy, salt, and black pepper. Beat well. Pour slowly over strata, allowing to soak in. Cover tightly with foil and refrigerate overnight, or until the bread slices have absorbed the liquid. Preheat oven to 350. Bake strata, uncovered, 50 minutes, or until puffed and golden.
