Tuna Minestrone

Adapted from Tuna for Today

  • 5 cups low sodium chicken broth
  • 14 1/2 ozs canned Italian style tomatoes, undrained
  • 15 ozs no-salt-added dark red kidney beans, rinsed and drained
  • 6 ozs no-salt-added tomato paste
  • 2 tsps Italian seasoning
  • 1/4 tsp salt
  • 2 ozs shell pasta, uncooked
  • 16 ozs frozen mixed vegetables, thawed
  • 12 ozs tuna in water, drained and flaked
Tuna Minestrone
In a large saucepan, combine chicken broth, tomatoes, kidney beans, tomato paste, and seasoning, Mix well. Bring mixture to a boil over high heat. Add uncooked shell pasta and tuna. Cook for eight minutes, or until pasta and vegetables are cooked.
