Turkey Chili With Cornmeal Dumplings

Adapted from General Mills, Inc.

  • 16 ozs turkey light meat, skinless, cubed
  • 15 ozs no-salt-added tomato sauce
  • 30 ozs vegetarian chili with beans, undrained
  • 8 ozs no-salt-added canned corn, undrained
  • Dumplings:
  • 1 1/2 cups low-fat baking mix
  • 1/2 cup cornmeal
  • 1/2 cup fat-free milk
  • 1/2 cup cheddar cheese, shredded
In a large saucepan, cook turkey until no longer pink. Add tomato sauce, chili with beans, and corn. Heat to boiling; reduce heat to low. Meanwhile, to prepare dumplings, combine baking mix, cornmeal, and milk. Shape dough in 14 one ounce balls onto hot chili mixture (do not drop directly into liquid). Cook, uncovered over low heat for 15 minutes. Cover and cook ten minutes more, or until dumplings are dry. Sprinkle with cheese. Cover and cook for three minutes, or until cheese has melted.
