celery, chopped fine

canned turkey gravy

turkey light meat, skinless, cooked and cubed

bread crumbs

eggs, slightly beaten

parsley

poultry seasoning

black pepper
Preheat oven to 350. Prepare a 8"x4" loaf pan with cooking spray; set aside. In a large saucepan, cook onions and celery until tender. Stir in gravy and heat through. Add turkey, bread crumbs, eggs, parsley, poultry seasoning, salt, and black pepper. Mix well. Place mixture into prepared pan. Place loaf pan in a larger baking pan. Place baking pan with loaf pan in oven. Add enough water to the baking pan to reach one inch up the sides of the loaf pan. Bake one hour, or until loaf reaches 185 on a meat thermometer. Let loaf stand ten minutes before slicing.
