Arizona Chili

Adapted from Family Circle 313 One Dish Meals

  • 2 lbs ground chicken breast
  • 1 cup onions, chopped
  • 4 ozs jalapenos, chopped
  • 14 1/2 ozs canned crushed tomatoes
  • 31 ozs canned dark red kidney beans, undrained
  • 1 tbsp chili powder
  • 2 tsps salt
  • 1 cup low-fat tortilla chips, crushed
  • 1 cup cheddar cheese, shredded
Arizona Chili
In a large saucepan cook the chicken, onions, and jalapenos until the chicken is no longer pink. Stir in the crushed tomatoes, kidney beans, chili powder, and salt. Mix well. Cook for 15 minutes, or until heated through. If desired, top with crushed chips and cheese.
