ground chicken breast skinless

onions, chopped

barbecue sauce

mozzarella cheese, shredded
Place split muffins onto a prepared baking sheet; set aside. In a large skillet, cook chicken and onions until the chicken is no longer pink. Add salt. Cool. Place mixture into a food processor and process until shredded. Place back into skillet and add barbecue sauce. Heat through. Preheat oven to 425. Place a heaping tablespoon of chicken mixture onto each muffin piece. Sprinkle each with some cheese. Bake for ten minutes, or until lightly browned on top.
