BBQ Pasta Salad

Adapted from Winlands Foods, Inc.

  • 1 lb chicken breast halves skinless, cubed
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 3 ozs frozen corn, thawed
  • 8 ozs whole wheat rotini pasta, cooked and drained
  • 4 ozs barbecue sauce
  • 4 ozs light mayonnaise
  • 1 tsp salt
  • 1/4 tsp black pepper
BBQ Pasta Salad
In a large saucepan, cook chicken, onions, celery, and corn until tender. Cool. Stir in cooked pasta, barbecue sauce, mayonnaise, salt, and black pepper. Mix well. Chill several several hours before serving. Yields: 9 - 1 cup servings.
