eggs, slightly beaten

fat-free milk

black pepper

2 ozs
frozen chopped broccoli, thawed and cooked

2 ozs
frozen hash browns, thawed and cooked

cheddar cheese, shredded

olive oil
In a liquid measure, combine eggs, milk, salt, and black pepper until mixed well. In a large skillet, heat oil until hot and coats the bottom of the pan. Pour in the egg mixture. Mixture will set fast at the edges. Gently push cooked edges toward the center with the back of a spoon. Continue cooking until no visible egg liquid remains. Place chopped broccoli, hash browns, cheese, on one side of omelet. Fold omelet in half with a large spatula. Cook until the omelet is heated through.
