unbleached flour

granulated sugar

dried figs, chopped

low-fat buttermilk

olive oil

baking powder

baking soda

1/2 tsp
salt

1/2 tsp
cardamom

2 whole
eggs
Preheat oven to 350. Prepare a 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, figs, buttermilk, oil, baking powder, baking soda, salt, cardamom, and eggs. Mix until all is moistened. Pour batter into prepared pan. Bake for one hour, or until toothpick inserted in center comes out clean.
