carrots, shredded
Preheat oven to 400. Prepare 12 standard muffin cups with cooking spray; set aside. In a mixing bowl combine cereal, milk, and corn syrup. Let stand for five minutes. Then, add egg, sugar,and oil. Mix well. In a smaller bowl, combine flour, baking soda, cinnamon, and salt. Add flour mixture to cereal mixture. Mix well. Stir in carrots. Spoon batter evenly into prepared muffin cups. Bake for 20 minutes, or until lightly browned.
