Chicken Mushroom Sloppy Joes #2

Adapted from The Mushroom Council

  • 1 lb ground chicken breast skinless
  • 8 ozs mushrooms, chopped fine
  • 2 cups onions, chopped fine
  • 1 cup no-salt-added ketchup
  • 2 tbsps tomato paste
  • 4 tsps light brown sugar, packed
  • 1 tbsp balsamic vinegar
  • 2 tsps Worcestershire sauce
  • 1 tbsp chili powder
  • 2 tsps ground mustard
  • 1 1/2 tsps salt
  • 1 tsp paprika
  • 9 whole hamburger buns
Chicken Mushroom Sloppy Joes #2
In a skillet, cook chicken, mushrooms, and onions until chicken is no longer pink and vegetables are tender. In a small bowl, combine ketchup, tomato paste, brown sugar, balsamic vinegar, Worcestershire sauce, chili powder, ground mustard, salt, and paprika. Mix well. Add to chicken mixture. Bring to a boil. Reduce heat and cook ten minutes or until thickened. Yields: 9 - half cup servings.
