Cinnamon Streusel Cake

Adapted from Pinnacle Foods Corp.

  • 18 1/4 ozs yellow cake mix
  • 3 ozs instant vanilla pudding mix
  • 1 tbsp olive oil
  • 1 1/3 cups water
  • 2 whole eggs
  • Streusel:
  • 1/2 cup unbleached flour
  • 1/2 cup light brown sugar, packed
  • 3 tssps cinnamon
  • 3 tbsps margarine
Cinnamon Streusel Cake
Preheat oven to 375. Prepare a tube pan with cooking spray; set aside. In a mixing bowl combine cake mix, pudding mix, oil, water, and eggs. Mix until all is moistened. Spread two quarters of batter evenly into prepared pan; set aside. Meanwhile to prepare streusel, combine flour, brown sugar, cinnamon, and margarine. Mix until crumbly. Reserve 1/3 cup. Sprinkle remaining over batter in pan. Spread with remaining batter and sprinkle with reserved topping. Bake for 50 minutes, or until toothpick inserted in center comes out clean.
