frozen spinach, thawed and well drained

Monterey Jack cheese, shredded
Preheat the oven to 350. Prepare a 9" pie dish with cooking spray; set aside. In a large skillet, cook chicken and onions until the chicken is no longer pink. Add spinach, salt, and black pepper. Mix well and cook until excess moisture is evaporated. Cool. Meanwhile, in a mixing bowl, combine eggs and cheese. Add to cooled spinach mixture. Spread into prepared dish. Bake for 45 minutes, or until toothpick inserted in center comes out clean.
