Preheat oven to 325. Prepare a 9"x13" pan with cooking spray; set aside. In a large skillet, cook chicken until no longer pink. Add canned tomatoes. Cook for five minutes, or until heated through. In a bowl, combine spinach and cottage cheese. Mix well. Layer four noodles, half spinach mixture, half tomato mixture, and half cheese evenly in prepared pan. Repeat layers once. Bake for 45 minutes, or until noodles are cooked.
