low-fat cream of mushroom soup

light mayonnaise
Preheat oven to 350. Prepare a 1 3/4-quart casserole dish with cooking spray; set aside. In a large saucepan, cook celery, onions, bell peppers, and mushrooms until tender. Stir in turkey, rice, soup, and mayonnaise, mixing well. Place into prepared dish. Bake for 20 minutes.
