Gingerbread Reindeer Cookies

Adapted from Easy As Pie

  • 14 1/2 ozs gingerbread mix
  • 2 whole eggs
  • 2 tbsps olive oil
  • 1 cup unbleached flour
  • 32 pcs mini pretzels
  • 8 pcs red jelly beans, cut in half
  • 16 pcs black jelly beans, cut in half
Gingerbread Reindeer Cookies
Preheat oven to 350. In a mixing bowl, combine mix, eggs, oil, and flour. Mix until soft dough forms. For each cookie, place one and half inch ball of dough on a prepared baking sheet. Flatten balls into a three inch oval shape. Use fingers to press in sides of each cookie about one-third from one end of cookie to resemble reindeer face. Press pretzels into cookies for antlers. Press red jelly beans into cookies for noses and black jelly beans for eyes. Bake for ten minutes, or until bottoms are firm.
